Apple Carrot and Cinnamon Muffins or Loaf by Cheeky Cookies

We love food- and so every so often we decided to post some yummy recipes to enjoy and share with your kids.
This one is SUPER SUPER healthy- and we have been assured by their creator Cheeky Cookies- that even the fussiest kid will eat them.. Well if you read my fussy kids post you would know.. I am looking for anything healthy to pass that fussy test..
Anyway give it a shot- let us know how it turns out..

Apple Carrot and Cinnamon Muffins or loaf.
Yields 12 large muffins or 24 mini muffins or one loaf.







Equipment:
1 large bowl
1 teaspoon
1 mixing spoon
1 cup
1 quarter cup ( or a measuring cup with many measurements )
1 large Muffin tin
Paty Pans (optional)

Ingredients:
3 small apples (can be any colour) skin on and diced
2 small carrots skin on grated
1 tsp of Cinnamon
1/2 tsp salt
2 tsp baking powder
2 Cups plain flour
1/4 cup oil
1/2 cup milk
2 large eggs

Method:

1. Pre heat oven to 180c. line muffin tray with patty pans or grease with cooking spray. If making a loaf line a loaf pan with baking paper and grease the sides of the pan.

2.Wash and cut apples into 12ths by cutting in to 1/4's and then cutting the 1/4's into 3rds. cut away core and dice chunky.
Wash and crate carrots. leave apples and carrots to the side.

2.Measure the flour and sugar add to the large mixing bowl. Then add the Cinnamon the baking powder and salt. stir.

3. Measure and add the milk, oil and eggs to the flour mixture.
Stir the mixture until smooth.

4. Add the apples and Carrot to the mixture and stir through until just combined.

5. Spoon mixture into paty pans or greased muffin tin till just under the rim. If making a loaf pour into lined and greased loaf tin.

6.Bake in the oven at 180c for 25 minutes or until golden for Muffins.
Loaf: bake at 180c for 45 minutes or until golden.

7. remove from oven and allow to cool for 5 minutes before removing from pan.

8. Delicious served warm or cold, excellent for a quick snack or brekky on the go. Best eaten within 2 days after baking.

how much sugar did you add?

The recipe says add sugar, but you don't have any sugar in the ingredients list... what do you add, and is there an alternative we can use like prunes or apple juice?
